Rabbit and Game Recipes

Rabbit has had a long culinary tradition throughout the world, and despite being healthy, eco-friendly and delicious, today it is sadly seen as ‘unclean’ or ‘cruel’ by a large number of people.
In fact, rabbit meat is one of the healthiest meats available, offering about 1/3rd of the calories and 1/5th of the fat of pork, with very low cholesterol levels, and it is a green way to use what is in fact one of Europe’s biggest pests!
The only downside to rabbit, is that why it is healthy and an all white meat, it does lack certain vitamins, so while it is perfectly safe to eat, make sure it’s not all you eat!
